Easter: Banana cupcakes with Cadbury Philadelphia frosting

These are delicious. Seriously. You may have already seen my constant tweets about how delicious they really are. And now, lucky you, I am going to share my recipe with you!

They are also a great way to use up over ripe banana's.

Simply made Eastery (Yes, that is now a word!) with some Cadbury flake and mini eggs used ever so cleverly (ahem) to create a nest.

Oh and did I mention the delicious (over use of this word is needed with these) Cadbury Philadelphia cream cheese frosting???

Do you know what? Forget me blabbering on about them and try them for yourself. You will see! Here's how:

What you will need
225g plain flour
1/2 teaspoon bicarbonate of soda
2 1/2 teaspoons baking powder
1/4 teaspoon salt
110g butter
1 teaspoon vanilla extract
2 very ripe bananas (mashed up)
55ml milk, or buttermilk
2 eggs
115g caster sugar

Preheat oven to 190 C / Gas 5.

Step One Sift all the dry ingredients into a bowl and mix together.
Step Two Put the butter and vanilla in a seperate bowl and beat together until it's creamy.
Step Three: Gradually add sugar until the mixture is light and fluffy, add the eggs one at a time beating each time.
Step Four Add a bit of milk at a time, then a bit of dry mixture, then a bit of banana to the cream mixture - beat well each time and keep doing this until you only have one bowl of mixture!
Step Five Fill cupcake tray or cases 1/2 full as they rise quite well, bake for about 20mins. 
Leave to cool in tray for 5 - 10 mins

For the topping:
Cream together one pack of Cadbury philadephia with 1/4 cup of butter.
Add in 2 cups of icing sugar and mix until creamy. Spoon onto your cakes.
Crumble up some Cadbury flake and sprinkle on top of the frosted cupcakes. Place mini eggs in the center to make Easter nests.
